Ingredients

  • 1 1/2 lb. beef (cheaper cut)
  • 1 good-sized marrow bone
  • 1 medium potato
  • 1 medium onion
  • 1 medium carrot
  • 1 1/2 cups tomatoes
  • 1 tablespoon salt
  • 6 quarts cold water
  • 2 stalks celery
  • 2 or 3 sprigs fresh parsley

Instructions

  1. Combine all ingredients in a large soup kettle.
  2. Bring to a boil.
  3. Reduce heat to a very slow simmer with just 2 or 3 bubbles coming up.
  4. Simmer for 3 1/2 hours.
  5. Add more water if the soup has simmered down too much.
  6. Remove the meat and bone from the soup.
  7. Strain the soup into another kettle.
  8. Bring the strained soup to a boil, then add noodles.
  9. Cook the noodles slowly for 10 minutes.
