Ingredients

  • 2 1/2 cups sifted flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup nut meats
  • 1 beaten egg
  • 1 1/2 cups brown sugar
  • 1/4 cup shortening
  • 2 tablespoons vinegar
  • 1 cup pitted dates, halved

Instructions

  1. Sift the flour, salt, and baking soda together and mix in broken nut meats.
  2. Add enough boiling water to the vinegar to make 1 1/2 cups, then add shortening.
  3. Pour the hot mixture over the halved, pitted dates and let stand for 10 minutes.
  4. In a separate bowl, beat the egg and combine with brown sugar.
  5. Add the egg mixture to the dry ingredients.
  6. Add the dates and water-vinegar mixture to the batter.
  7. Mix well until all ingredients are combined.
  8. Pour the batter into a greased loaf pan.
  9. Bake at 350°F (175°C) for 1 hour and 15 minutes.
