Ingredients

  • 1 1/2 cups milk
  • 1 1/2 cups chopped pitted dates
  • 2 1/2 cups all-purpose flour
  • 1 1/3 cups granulated sugar
  • 2 1/4 teaspoons baking soda
  • 1/4 teaspoon salt
  • 1 cup pecans, coarsely chopped
  • 2 large eggs
  • 1 teaspoon lemon extract
  • Orange-Lemon Glaze

Instructions

  1. Heat the oven to 350°F (175°C).
  2. Grease two clean, empty 1-pound coffee cans.
  3. In a 2-quart saucepan over medium-high heat, bring milk to a boil.
  4. Immediately remove from heat; add chopped pitted dates and let stand for 10 minutes.
  5. In a large bowl, stir together flour, sugar, baking soda, salt, and chopped pecans until well mixed.
  6. In a medium bowl, beat eggs lightly with a wire whisk or fork.
  7. Stir in the date-milk mixture and lemon extract until well blended.
  8. Pour the egg mixture into the flour mixture and stir until just combined.
  9. Divide the batter evenly between the prepared cans.
  10. Bake for 50 to 55 minutes, until a wooden pick inserted in the center comes out clean.
  11. Cool the loaves in the cans on a wire rack for 10 minutes.
  12. Remove the loaves from the cans and cool completely.
  13. Brush the loaves with the Orange-Lemon Glaze.
  14. Let stand for about 15 minutes until the glaze is set.
