Ingredients

  • 2 1/4 cups flour, divided
  • 1/2 cup confectioners sugar
  • 1 cup (2 sticks) butter
  • 4 eggs
  • 1 1/2 cups sugar
  • 1/3 cup lemon juice
  • 1 tablespoon lemon peel, grated
  • 1 teaspoon baking powder

Instructions

  1. Preheat oven to 350°F.
  2. Lightly grease a 13 x 9-inch pan.
  3. In a large bowl, combine 2 cups of the flour with 1/2 cup confectioners sugar.
  4. Cut in 1 cup butter until crumbly.
  5. Pat the mixture evenly into the pan.
  6. Bake for 15 to 20 minutes or until lightly browned.
  7. In a separate large bowl, beat 4 eggs until foamy.
  8. Add the remaining 1/2 cup flour, 1 1/2 cups sugar, 1/3 cup lemon juice, 1 tablespoon lemon peel, and 1 teaspoon baking powder to the eggs and mix well.
  9. Pour the lemon mixture over the baked crust.
  10. Bake for an additional 25 to 30 minutes or until the lemon topping is set and lightly browned.
  11. Cool completely on a wire rack.
  12. Dust the cooled bars with confectioners sugar.
  13. Cut into 1 x 2-inch bars and store in the refrigerator.
