Ingredients

  • 2 lb. crappie fillets
  • 10 oz. buttermilk
  • 6 oz. 7‑Up
  • 1 tsp. soy sauce
  • 1 lb. cornmeal
  • 2 cups flour
  • 3 Tbsp. lemon pepper
  • 2 Tbsp. seasoned black pepper
  • 3 Tbsp. seasoned salt

Instructions

  1. Combine buttermilk and soy sauce in a large bowl and mix well.
  2. Set aside.
  3. In a large resealable bag, combine cornmeal, flour, lemon pepper, seasoned black pepper, seasoned salt and table salt.
  4. Shake the bag to mix the dry ingredients evenly.
  5. Dip crappie fillets first into the buttermilk mixture, then coat thoroughly with the dry mix from the bag.
  6. Shake off excess coating and place fillets in hot peanut oil.
  7. Deep‑fry until the fillets are golden brown and crispy, about 4–5 minutes per side.
  8. Remove from oil, drain on paper towels, and serve hot.
