- Combine buttermilk and soy sauce in a large bowl and mix well.
- Set aside.
- In a large resealable bag, combine cornmeal, flour, lemon pepper, seasoned black pepper, seasoned salt and table salt.
- Shake the bag to mix the dry ingredients evenly.
- Dip crappie fillets first into the buttermilk mixture, then coat thoroughly with the dry mix from the bag.
- Shake off excess coating and place fillets in hot peanut oil.
- Deep‑fry until the fillets are golden brown and crispy, about 4–5 minutes per side.
- Remove from oil, drain on paper towels, and serve hot.
