Ingredients

  • 1 cup flour
  • 2 1/2 cups milk
  • 3 eggs
  • 10 oz bacon or Canadian bacon

Instructions

  1. In a bowl, combine flour and half of the milk and beat until smooth.
  2. Add eggs one at a time, beating after each addition.
  3. Stir in the rest of the milk.
  4. Set aside the batter for a short time while preparing bacon.
  5. Cut bacon into small strips or cubes.
  6. Saute bacon lightly in a skillet until cooked and lightly browned.
  7. Distribute bacon bits in an ovenproof casserole dish.
  8. Pour the pancake batter over the bacon.
  9. Bake at 400°F for about 25 minutes or until the pancake is set and golden brown.
  10. Cut into squares and serve warm.
