Ingredients

  • 5 ears corn
  • 3 Tbsp. butter or margarine
  • 1 medium green pepper, thinly sliced crosswise
  • 1/2 cup thinly sliced onion
  • 4 eggs
  • 2 cups milk
  • 1 Tbsp. sugar
  • 1 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 2 cups sliced cooked ham or diced chicken (optional)

Instructions

  1. Cut kernels from cobs to yield about 3 1/3 cups of corn.
  2. In a large skillet, melt butter or margarine.
  3. Add corn, green pepper, and onion. Cook and stir for 3 minutes.
  4. Remove from heat and set aside.
  5. In a mixing bowl, beat the eggs.
  6. Add milk, sugar, salt, and pepper; mix well.
  7. Combine the cooked corn mixture with the egg mixture.
  8. Stir in sliced cooked ham or diced chicken if using.
  9. Pour the mixture into a greased baking dish.
  10. Bake at 350°F (175°C) for about 45 minutes, or until set and golden on top.
