Old-Fashioned Southern Corn Pudding
A comforting Southern corn pudding combining sweet corn, green peppers, and onions, enriched with eggs and milk, perfect for family dinners or holiday gatherings.

Instructions
- Cut kernels from cobs to yield about 3 1/3 cups of corn.
- In a large skillet, melt butter or margarine.
- Add corn, green pepper, and onion. Cook and stir for 3 minutes.
- Remove from heat and set aside.
- In a mixing bowl, beat the eggs.
- Add milk, sugar, salt, and pepper; mix well.
- Combine the cooked corn mixture with the egg mixture.
- Stir in sliced cooked ham or diced chicken if using.
- Pour the mixture into a greased baking dish.
- Bake at 350°F (175°C) for about 45 minutes, or until set and golden on top.
