Peggy'S Dirty Rice

- Cook chicken gizzards and livers until tender.
- Drain, reserving water, then dice the meat and set aside.
- In a heavy iron Dutch oven, fry pork and beef until browned.
- Remove from the pot, and in the remaining fat, brown the flour until very dark brown.
- Add diced onions, celery, and garlic, and cook until all are soft and browned.
- Add seasoning and broth from the chicken.
- Let simmer about 20 minutes.
- Add cooked rice and the diced meats, mixing thoroughly.
- Turn on very low heat, cover, and let steam for 30 minutes.
- Five minutes before serving, add green onion tops and parsley, lifting and blending with a fork.
