Ingredients

  • 1 1/2 cups cheddar cheese flavored cracker crumbs
  • 1/3 cup margarine or butter
  • 1 1/4 cups milk
  • 2 cups fresh corn, cut from cob
  • 2 tablespoons butter
  • 1 teaspoon grated onion
  • 2 tablespoons flour
  • 2 eggs
  • 1/2 cup sliced pimento-stuffed olives

Instructions

  1. Mix the crushed cheddar cheese flavored cracker crumbs with melted butter.
  2. Reserve 1 cup of the crumb mixture; press the remaining crumbs onto the bottom and sides of a 9-inch pie plate to form the crust.
  3. In a saucepan, melt butter and cook grated onion until tender.
  4. Add flour to the saucepan and cook for 1 minute, stirring constantly.
  5. Gradually whisk in milk and cook until the mixture thickens.
  6. Remove from heat and stir in beaten eggs, sliced pimentos-stuffed olives, and fresh corn.
  7. Pour the mixture into the prepared crust.
  8. Sprinkle the reserved cracker crumb mixture on top.
  9. Bake at 375°F (190°C) for about 45 minutes or until golden and set.
