  • 2 medium cloves garlic
  • 1/2 c. fresh Parmesan, grated
  • 4 Tbsp. butter or margarine
  • 2 Tbsp. olive oil
  • 1/2 c. Monterey Jack cheese, grated
  • 1/4 c. fresh parsley, chopped
  • 1 baguette or pita bread

Instructions

  1. Chop olives coarsely in a food processor.
  2. Transfer to a medium bowl.
  3. With the machine running, drop garlic through the feed tube and mince.
  4. Add Parmesan, butter, and olive oil.
  5. Process to a paste.
  6. Add the olive paste to the bowl with the chopped olives.
  7. Fold in Monterey Jack cheese and chopped parsley.
  8. Mix well.
