Ingredients

  • 1 beaten egg
  • 1/2 cup soft bread crumbs
  • 1/3 cup pizza sauce
  • 1/4 cup finely chopped onion
  • 1 pound very lean ground beef
  • 36 medium pimiento-stuffed green olives, drained

Instructions

  1. In a medium bowl, combine the beaten egg, bread crumbs, pizza sauce, chopped onion, salt, and pepper.
  2. Add the ground beef and mix well until all ingredients are evenly incorporated.
  3. Shape about 1 tablespoon of the meat mixture around each olive to form round meatballs.
  4. Place the meatballs in a 13 x 9 x 2-inch baking dish.
  5. Bake in a 375°F (190°C) oven for about 20 minutes until cooked through and browned.
  6. Serve warm.
