Ingredients

  • 15 oz. can garbanzo beans, drained
  • 1/4 cup mayonnaise or salad dressing
  • 1/4 cup bottled Green Goddess salad dressing or other creamy salad dressing
  • 12 (3-inch) whole wheat lahvosh rounds
  • 1 1/2 cups shredded lettuce
  • 1 cup shredded Cheddar cheese (4 oz.)

Instructions

  1. In a blender or food processor, combine garbanzo beans, mayonnaise or salad dressing, and Green Goddess salad dressing.
  2. Cover and blend until the mixture is smooth.
  3. Spread about 2 tablespoons of the chickpea mixture over each lahvosh cracker.
  4. Sprinkle shredded lettuce, shredded Cheddar cheese, and sliced almonds over each cracker.
  5. Layer three lahvosh crackers in a stack to form four stacks.
  6. Cover the salads with clear plastic wrap and refrigerate for up to 4 hours.
