Onion Batter Rolls

Instructions
- Dissolve yeast in warm water.
- Add shortening, salt, sugar, onion, and half the flour to the yeast mixture.
- Beat the mixture for 2 minutes at medium speed on a mixer, scraping sides and bottom of the bowl frequently.
- Add the remaining flour and blend in with a spoon until smooth.
- Scrape batter from sides of the bowl.
- Cover and let rise in a warm place until doubled in bulk (about 30 minutes).
- Stir down the batter.
- Spoon the batter evenly into a greased muffin pan, filling each half full.
- Let rise in a warm place until the batter reaches 1/2 inch from the top of the pans (about 40 minutes).
- Bake in a moderate oven at 375°F for 20 to 25 minutes, or until golden brown.
- To test doneness, tap the top crust; it should sound hollow.
- Immediately remove from pans to a wire rack.
- Brush the tops with melted butter or shortening.
- Avoid placing in direct drafts.
