Ingredients

  • 1 package active dry yeast
  • 1 1/4 cup warm water
  • 2 tablespoon soft shortening
  • 2 teaspoon salt
  • 2 tablespoon sugar
  • 2 to 3 tablespoon instant minced onion
  • 3 cup sifted enriched flour

Instructions

  1. Dissolve yeast in warm water.
  2. Add shortening, salt, sugar, onion, and half the flour to the yeast mixture.
  3. Beat the mixture for 2 minutes at medium speed on a mixer, scraping sides and bottom of the bowl frequently.
  4. Add the remaining flour and blend in with a spoon until smooth.
  5. Scrape batter from sides of the bowl.
  6. Cover and let rise in a warm place until doubled in bulk (about 30 minutes).
  7. Stir down the batter.
  8. Spoon the batter evenly into a greased muffin pan, filling each half full.
  9. Let rise in a warm place until the batter reaches 1/2 inch from the top of the pans (about 40 minutes).
  10. Bake in a moderate oven at 375°F for 20 to 25 minutes, or until golden brown.
  11. To test doneness, tap the top crust; it should sound hollow.
  12. Immediately remove from pans to a wire rack.
  13. Brush the tops with melted butter or shortening.
  14. Avoid placing in direct drafts.
