Bright and flavorful, these orange-kissed beets combine sweet raisins and zesty orange peel for a refreshing side dish perfect for casual or special occasions.

Ingredients

  • 1/3 cup orange juice
  • 2 tablespoons light brown sugar
  • 1 tablespoon margarine
  • 1/2 teaspoon cornstarch
  • 1/8 teaspoon ground ginger
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 (8 1/4 oz.) can sliced beets, drained
  • 1 tablespoon golden raisins
  • strips of orange peel

Instructions

  1. In a saucepan over medium heat, cook and stir orange juice, brown sugar, margarine, cornstarch, ginger, salt, and pepper until thickened.
  2. Add the drained sliced beets and golden raisins to the saucepan.
  3. Heat thoroughly until everything is heated through.
  4. Garnish with strips of orange peel before serving.
