Ingredients

  • 1/4 cup salad oil
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 2 1/2 cups zucchini, shredded
  • 6 eggs, beaten
  • 1/3 cup dry bread crumbs
  • 1/2 teaspoon salt
  • 1/2 teaspoon dry basil leaves
  • 1/2 teaspoon oregano leaves
  • 1/4 teaspoon pepper

Instructions

  1. Combine salad oil, chopped onion, and minced garlic in a skillet and cook, stirring, until almost limp, about 4 minutes.
  2. Add shredded zucchini and cook until tender-crisp.
  3. In a mixing bowl, beat eggs and mix with bread crumbs, salt, dry basil, oregano, pepper, shredded Cheddar cheese, and the cooked zucchini mixture.
  4. Pour the mixture into a greased baking dish and sprinkle with grated Parmesan cheese and sesame seeds.
  5. Bake in a 325°F oven for approximately 30 minutes or until set when lightly touched in the center.
  6. Cut into 1-inch squares and serve warm, at room temperature, or cold.
