Ingredients

  • 3/4 c. chopped onions
  • 1 tsp. oil
  • 1 1/2 c. all-purpose flour
  • 1/4 c. chopped fresh chives
  • 2 Tbsp. sugar
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/4 tsp. baking soda
  • 1 c. buttermilk
  • 1/4 c. oil

Instructions

  1. Heat oven to 375°.
  2. Grease 12 muffin cups.
  3. In a small skillet, over medium heat, saute onions in 1 teaspoon oil until crisp-tender; set aside.
