Ingredients

  • 2 medium baking potatoes, peeled and thinly sliced
  • 3 medium onions, thinly sliced
  • salt
  • pepper
  • 1/2 cup skim milk
  • 2 tablespoons chopped pimiento
  • 2 tablespoons snipped parsley or dried parsley
  • 2 ounces process Swiss cheese, shredded

Instructions

  1. Layer half the potatoes and half the onions in a greased 10 x 6 x 1 3/4-inch baking dish.
  2. Sprinkle generously with salt and pepper.
  3. Combine milk, pimiento, and parsley; spoon half the mixture over the onion-potato layer.
  4. Repeat the layers with remaining potatoes, onions, and milk mixture.
  5. Cover and bake until tender.
