Ingredients

  • 1 egg
  • 1 1/2 cups Jiffy corn bread mix
  • 1/2 cup chopped onion
  • 2 teaspoons butter
  • 3 tablespoons butter
  • 1/2 cup milk
  • 1 teaspoon poppy seeds
  • 1 cup sharp Cheddar cheese shredded

Instructions

  1. Saute chopped onions in 2 teaspoons of butter until tender.
  2. In a mixing bowl, beat the egg and milk together.
  3. Add the Jiffy corn bread mix to the egg and milk mixture and stir until combined.
  4. Fold in the sautéed onions and 1/2 cup of shredded Cheddar cheese.
  5. Pour the batter into a greased 1 1/2-quart casserole dish.
  6. Sprinkle the top with poppy seeds, drizzle with 3 tablespoons of additional butter, and sprinkle with the remaining cheese.
  7. Bake uncovered at 400°F for 25 minutes until golden and set.
