Beef Carbonade is a hearty, flavorful Belgian-style beef stew with tender meat simmered in beer and onions, perfect for comforting family dinners or special gatherings.

Ingredients

  • 3 to 4 lb. beef brisket, pot roast or shoulder roast
  • 3 medium onions, sliced
  • 12 oz. can beer
  • 1 Tbsp. brown sugar
  • 2 tsp. instant beef bouillon granules
  • 4 whole black peppercorns
  • 1/8 tsp. black pepper, cracked
  • 1 clove garlic, minced
  • 1 bay leaf
  • 1/4 tsp. dried thyme

Instructions

  1. Trim excess fat from the meat.
  2. Season the meat with a little salt and pepper.
  3. Place the meat in a 13 x 9 x 2-inch baking pan.
  4. Cover with sliced onions.
  5. Sprinkle lightly with salt.
  6. Reserve 1/3 cup of beer.
  7. Combine remaining beer with brown sugar, beef bouillon granules, black pepper, minced garlic, bay leaf, and dried thyme.
  8. Pour the beer mixture over the meat.
  9. Cover with foil and bake in a 350°F oven for 3 to 3 1/2 hours or until tender.
  10. Remove the meat to a platter and keep warm.
  11. Skim off excess fat from pan juices.
  12. Remove the bay leaf.
  13. In a saucepan, cook the pan juices down to 2 cups.
  14. Combine the reserved beer and flour; stir into the pan juices.
  15. Cook and stir until thick and bubbly, about 1 to 2 minutes.
