Ingredients

  • 1 cup all-purpose flour

  • 3/4 cup sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1/2 cup All-Bran cereal
  • 1 1/2 teaspoons grated orange peel
  • 1 teaspoon vanilla
  • 1 cup grated zucchini

Instructions

  1. Combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
  2. In a large mixing bowl, beat sugar, vegetable oil, and eggs until well combined.
  3. Stir in All-Bran cereal, grated orange peel, and vanilla extract.
  4. Add the flour mixture, grated zucchini, and nuts to the wet ingredients.
  5. Mix well until the batter is combined.
  6. Spread evenly in a greased 10 x 6 x 2-inch (1 1/2-quart) glass baking dish.
  7. Bake at 325°F (160°C) for 35 minutes or until a wooden pick inserted near the center comes out clean.
  8. Cool completely before spreading with Orange Cream Frosting.
