Ingredients

  • 1 2/3 c. flour
  • 1/2 c. sugar
  • 3/4 tsp. salt
  • 1 Tbsp. baking powder
  • 1 c. cereal
  • 3/4 c. orange juice
  • 1 Tbsp. grated orange rind
  • 2 eggs
  • 1/2 c. margarine

Instructions

  1. Mix flour, sugar, baking powder, and salt in a bowl. Add cereal and stir to combine.
  2. In a separate bowl, beat eggs and then stir in orange juice, melted margarine, and grated orange rind.
  3. Pour the wet mixture into the dry ingredients and stir just until dampened.
  4. Spoon the batter into greased muffin pans, filling each about two-thirds full.
  5. Bake at 425°F (220°C) for 15 to 20 minutes or until golden brown.
