Ingredients

  • 3/4 cup butter
  • 3/4 cup orange marmalade
  • 1/2 cup flaked coconut
  • 1/2 cup sugar
  • 2 eggs
  • 1 1/2 cups flour
  • 2 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1/4 teaspoon orange extract or 1 teaspoon orange juice

Instructions

  1. Preheat the oven to 375°F (190°C). Melt 1/4 cup of butter in a 9-inch ring mold.
  2. Spread the orange marmalade and flaked coconut evenly over the melted butter in the mold.
  3. In a large mixer bowl, combine sugar, eggs, and the remaining 3/4 cup of butter. Blend well at the lowest speed of the mixer.
  4. Add flour, baking powder, and salt alternately with milk and orange extract. Mix thoroughly at the lowest speed of the mixer.
  5. Spoon the batter evenly over the marmalade and coconut layer.
  6. Bake for 35 to 45 minutes until golden and a toothpick inserted in the center comes out clean.
  7. Cool for 5 minutes, then invert onto a serving plate. Serve with whipped cream or ice cream if desired.
