Ingredients

  • 1/4 cup butter
  • 1/2 cup brown sugar
  • 1 cup graham cracker crumbs
  • 1 cup toasted rice cereal, crushed
  • 1/2 cup chopped pecans
  • 2 (6 oz) cans frozen orange juice
  • 50 marshmallows, cut up
  • 2 cups whipping cream

Instructions

  1. Melt the butter in a saucepan over low heat.
  2. Add the brown sugar and heat slowly, stirring until the sugar is dissolved.
  3. Stir in the graham cracker crumbs, crushed toasted rice cereal, and chopped pecans.
  4. Press half of the crumb mixture into the bottom of a 13 x 9 x 2-inch pan, reserving the remaining mixture for topping.
  5. Heat the undiluted orange juice until warm.
  6. Add the marshmallows to the orange juice, stirring until they are melted completely.
  7. Cool the mixture until it begins to thicken, then whip until light and fluffy.
  8. Whip the heavy cream and fold it into the orange mixture.
  9. Pour the orange mixture over the crumb layer in the pan.
  10. Sprinkle the remaining crumb mixture over the top.
  11. Freeze the dessert until it is firm before serving.
