Ingredients

  • 4 medium yams
  • 1/4 tsp salt
  • 1/2 cup brown sugar, packed
  • 1 tablespoon cornstarch
  • 1 cup orange juice
  • 1/4 cup raisins
  • 1/4 cup butter or margarine
  • 3 tablespoons sherry or lemon juice
  • 3 tablespoons walnuts (optional)

Instructions

  1. Cook yams until tender.
  2. Peel and quarter yams lengthwise.
  3. Arrange yams in a 13 x 9 x 2-inch pan and sprinkle with salt.
  4. Combine brown sugar and cornstarch in a saucepan.
  5. Stir in orange juice and raisins.
  6. Bring mixture to a boil, stirring constantly.
  7. Reduce heat and cook until thickened.
  8. Add butter, walnuts, and sherry or lemon juice to the sauce.
  9. Pour the glaze over the yams.
  10. Bake at 350°F for 20 minutes.
