Ingredients

  • 2 c. all-purpose flour
  • 1/4 c. granulated sugar
  • 1 Tbsp. baking powder
  • 1/4 tsp. salt
  • 1/2 c. orange juice concentrate
  • 1/2 c. low sugar orange marmalade
  • 3/4 c. nonfat buttermilk
  • 1/4 c. vegetable oil
  • 1/4 c. egg substitute
  • 1 tsp. orange extract (optional)

Instructions

  1. In a large bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt.
  2. In a separate bowl, blend together the orange juice concentrate, low sugar orange marmalade, nonfat buttermilk, vegetable oil, and egg substitute.
  3. Add the wet ingredients to the dry ingredients, stirring just until the dry ingredients are moistened.
  4. Spray muffin cups with nonstick vegetable cooking spray and fill each about two-thirds full with the batter.
