Ingredients

  • 2/3 cup sugar
  • 1/3 cup brown sugar
  • 1/4 cup oil (no cholesterol)
  • 3 egg whites or Egg Beaters
  • 2/3 cup flour
  • 2/3 cup whole wheat flour
  • 1/2 cup oat bran
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon allspice or nutmeg
  • 3 cups shredded apples

Instructions

  1. Preheat oven to 350°F (175°C). Spray a 9 x 13 inch pan with non-stick spray.
  2. Cream together the sugar, brown sugar, oil, and egg whites until well combined.
  3. Add the flour, whole wheat flour, oat bran, baking soda, cinnamon, allspice (or nutmeg), and shredded apples to the creamed mixture.
  4. Mix well after each addition until the batter is smooth and evenly combined.
  5. Pour the batter into the prepared pan and spread evenly.
  6. Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow to cool slightly before serving.
