Ingredients

  • 1 (8 oz.) can crushed pineapple
  • 1 3/4 cups flour
  • 1/4 cup brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 eggs
  • 3/4 cup milk
  • 3 tablespoons melted butter
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Drain the crushed pineapple.
  2. In a large bowl, combine flour, brown sugar, baking powder, and salt.
  3. In a small bowl, beat eggs slightly, then stir in milk and melted butter.
  4. Add drained pineapple, chopped walnuts (if using), and orange peel to the egg mixture.
  5. Make a well in the center of the dry ingredients.
  6. Pour the wet mixture into the well and stir just until moistened.
  7. Spoon the batter into greased muffin cups.
  8. Bake at 400°F (200°C) for 20 to 25 minutes until golden.
