Ingredients

  • 2 lb. orange roughy
  • 2 Tbsp. fresh lemon juice
  • 1/2 c. freshly grated Parmesan
  • 4 Tbsp. butter
  • 3 Tbsp. mayonnaise
  • 3 Tbsp. chopped green onion
  • 1/4 tsp. salt
  • pepper to taste
  • dash of Tabasco sauce

Instructions

  1. Place fillets in a single layer in a buttered baking dish.
  2. Brush fillets with lemon juice and let stand for 10 minutes.
  3. Combine Parmesan, butter, mayonnaise, green onion, salt, pepper, and Tabasco sauce to make the cheese mixture.
  4. Broil fillets 3 to 4 inches under preheated broiler for 5 minutes.
  5. Spread the cheese mixture over the fillets.
  6. Broil for an additional 2 to 3 minutes, watching carefully.
