Ingredients

  • 1 1/2 Tbsp. plain gelatin
  • 1 c. cold water
  • 2 tbsp. grated orange rind
  • 2 tsp. grated lemon rind
  • 3/4 c. sugar
  • 1 c. orange juice
  • 1/2 c. lemon juice
  • 3 egg whites

Instructions

  1. Soften gelatin in 1/4 cup cold water and let stand for 5 minutes.
  2. Heat remaining 3/4 cup water, add grated orange and lemon rinds, and simmer for 10 minutes.
  3. Add the hot water mixture to the softened gelatin and stir until dissolved.
  4. Combine with sugar and fruit juices and chill until thickened.
  5. Fold in stiffly beaten egg whites.
  6. Pour the mixture into individual molds and chill until firm.
  7. Unmold the orange sponge before serving.
