Ingredients

  • 1/2 cup sugar
  • 1/3 cup margarine
  • 1/3 cup plain low-fat yogurt
  • 1/4 cup Egg Beaters
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 tablespoons unsweetened orange juice concentrate
  • 3 tablespoons water
  • 1 tablespoon grated orange rind

Instructions

  1. Cream sugar and margarine together.
  2. Add yogurt and Egg Beaters; mix well.
  3. Combine all-purpose flour, baking soda, baking powder, and salt; set aside.
  4. Mix orange juice concentrate, water, and grated orange rind.
  5. Gradually add the dry ingredients to the creamed mixture and orange juice mixture, mixing well after each addition.
  6. Drop teaspoons of dough onto a slightly oiled baking sheet.
  7. Bake at 350°F (175°C) for 8 to 10 minutes until golden.
  8. Remove cookies quickly from the baking sheet and cool on a wire rack.
  9. Once cooled, frost as desired.
