Ingredients

  • 3 eggs
  • 1 cup oil
  • 1/2 cup grated orange rind
  • 3/4 teaspoon baking powder
  • 3 teaspoons vanilla
  • 1 1/2 cups sugar
  • 2 cups grated zucchini
  • 3 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon
  • 1 cup nuts (optional)

Instructions
