Orangy Pumpkin Bread

Ingredients

  • 2/3 c. shortening
  • 2 2/3 c. sugar
  • 4 eggs
  • 1 (1 lb.) can pumpkin
  • 2/3 c. water
  • 3 1/3 c. flour
  • 2 tsp. baking soda
  • 1 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1 tsp. cloves
  • 1/2 tsp. baking powder
  • 1 orange
  • 2/3 c. chopped nuts
  • 2/3 c. chopped raisins or dates

Instructions

  1. Cream the shortening with sugar; add eggs, pumpkin and water. Sift together next 6 ingredients and add to pumpkin mixture. Remove seeds from orange.
  2. Using blender or grinder, grind orange, including peel; add to pumpkin batter.
  3. Stir in nuts and raisins or dates.
  4. Pour into two well-greased 9 x 5 x 3-inch loaf pans or seven 1-pound cans and bake in a 350° oven for 1 hour.
  5. Makes 2 large or 7 small loaves.
