Ingredients

  • 1/2 cup green onion slices
  • 1/3 cup red sweet pepper, chopped
  • 1/2 cup oleo
  • 4 cups cooked rice
  • 2 (8 oz.) cans water chestnuts, sliced
  • 1/4 cup parsley, chopped
  • 1/2 cup grated Italian cheese

Instructions

  1. In a large skillet, melt the oleo and sauté the green onion slices and chopped red sweet pepper.
  2. Add the cooked rice, sliced water chestnuts, and chopped parsley to the skillet.
  3. Cook over low heat until thoroughly heated, stirring occasionally.
  4. Stir in the grated Italian cheese and continue cooking for 5 minutes.
