Juicy oven-baked barbecue chicken with tangy ketchup, cider vinegar, and sweet brown sugar, perfect for casual family dinners or summer cookouts with bold flavors.

Ingredients

  • 2 broiler fryers (3 lb each), cut up
  • 1 medium onion, chopped
  • 2 Tbsp margarine
  • 1 cup ketchup
  • 1/2 cup cider vinegar
  • 3 Tbsp brown sugar
  • 1/2 tsp pepper

Instructions

  1. Preheat oven to 375°F (moderate).
  2. Place the chicken skin side up on a rack in a large shallow pan. Bake for 30 minutes.
  3. Saute chopped onion in margarine until golden.
  4. Add ketchup, cider vinegar, brown sugar, and pepper to the onion. Bring to a boil and simmer for 5 minutes.
  5. Remove chicken from oven and turn pieces skin side down.
  6. Spoon some sauce over the chicken and bake for 15 minutes more.
  7. Turn chicken pieces skin side up and spoon remaining sauce over them.
  8. Bake for 15 minutes more.
  9. Increase oven temperature to 425°F and cook for an additional 10 minutes.
