Oven-fried chicken Normandy features crispy, seasoned coating paired with tender, flavorful chicken thighs and crispy potato wedges, perfect for a comforting family dinner.

Ingredients

  • 1/2 cup margarine
  • 2 tablespoons Dijon mustard
  • 1 1/2 pounds Russet potatoes
  • 4 large chicken legs and thighs
  • 1 1/2 to 2 cups seasoned crumbs

Instructions

  1. Melt the margarine; put 3 tablespoons of it into a dish and blend in the Dijon mustard.
  2. Wash, cut, and dry the potatoes.
  3. Cut the potatoes into wedges and coat them with the remaining margarine.
  4. Place the potato wedges in a large baking pan.
  5. Place a rack over the potatoes in the baking pan.
  6. Coat the chicken legs and thighs with the margarine mixture, then roll in the seasoned crumbs, shaking off excess.
  7. Arrange the coated chicken, skin side up, on the rack over the potatoes.
  8. Bake at 400°F (200°C) for 45 minutes or until the meat of the thighs is no longer pink when tested.
