- Melt the margarine; put 3 tablespoons of it into a dish and blend in the Dijon mustard.
- Wash, cut, and dry the potatoes.
- Cut the potatoes into wedges and coat them with the remaining margarine.
- Place the potato wedges in a large baking pan.
- Place a rack over the potatoes in the baking pan.
- Coat the chicken legs and thighs with the margarine mixture, then roll in the seasoned crumbs, shaking off excess.
- Arrange the coated chicken, skin side up, on the rack over the potatoes.
- Bake at 400°F (200°C) for 45 minutes or until the meat of the thighs is no longer pink when tested.
