Ingredients

  • 2 to 2 1/2 lb. chicken pieces
  • 1/4 cup cornflake crumbs
  • 1 tablespoon fresh parsley
  • 1/2 cup plain low-fat yogurt
  • 1 clove garlic
  • 2 teaspoons Worcestershire sauce
  • dash of ground red pepper

Instructions

  1. Rinse chicken pieces and pat dry.
  2. Place chicken on a rack in a shallow baking pan and set aside.
  3. In a small bowl, combine cornflake crumbs and parsley; set aside.
  4. In another bowl, mix yogurt, minced garlic, Worcestershire sauce, and ground red pepper.
  5. Brush chicken with the yogurt mixture, then sprinkle with the crumb mixture.
  6. Bake uncovered in a 375°F oven for 45 to 55 minutes or until chicken is tender and no longer pink.
