Ingredients

  • 1/2 c. seasoned fine dry bread crumbs
  • 1/2 c. grated Parmesan cheese
  • 1/4 c. snipped parsley
  • 1/2 tsp. oregano, crushed
  • 2 (2 1/2 to 3 lb.) broiler-fryer chicken, cut up
  • 1/2 c. butter, melted

Instructions

  1. Combine bread crumbs, Parmesan cheese, parsley, and oregano in a bowl.
  2. Brush chicken pieces with melted butter.
  3. Roll chicken in the crumb mixture until coated.
  4. Place chicken, skin side up, in an ungreased shallow baking pan.
  5. Sprinkle remaining crumb mixture over the chicken.
  6. Bake in a 375°F oven until tender, about 50 to 60 minutes. Do not turn the chicken.
