Ingredients

  • 4 or 8 oz. can oysters
  • 1/2 lb. self-rising flour
  • 1/2 stick butter
  • 2 1/2 cups milk
  • 2 tablespoons sugar
  • 2 eggs

Instructions

  1. Drain the oysters using a colander.
  2. In a mixing bowl, combine self-rising flour, sugar, eggs, milk, and softened butter to form a batter similar to pancake batter.
  3. Gently fold in the drained oysters into the batter.
  4. Lightly grease a pan and pour in the batter or spoon to form small circles, like pancakes.
  5. Cook on medium to medium-low heat until golden brown on both sides and cooked through.
