Ingredients

  • 3 dozen freshly opened oysters
  • 3 slices bacon
  • 1/2 cup minced green onions
  • 1/4 cup minced green pepper
  • 1/4 cup minced celery
  • 1 teaspoon lemon juice
  • 1 teaspoon Worcestershire sauce
  • 2 drops Tabasco sauce

Instructions

  1. Preheat oven to 400°F.
  2. Place two drained oysters on the deep half of each shell. Arrange the filled oyster shells on a layer of rock salt in a large baking pan or six individual shallow casseroles.
  3. Fry bacon until crisp, then remove from pan and drain.
  4. Drain and crumble the bacon.
  5. In the bacon fat, add minced green onions, green pepper, and celery.
  6. Cook until almost tender.
  7. Season the mixture with lemon juice, Worcestershire sauce, and Tabasco.
  8. Spoon the mixture onto the oysters in the shells and top with crumbled bacon.
  9. Bake until bubbly and browned, about 10 minutes.
