Ingredients

  • 3 lb. turnip, peeled and cubed
  • 1/2 lb. bacon
  • 2 chopped onions
  • 1 clove garlic, chopped
  • 1 medium bell pepper, chopped
  • 2 eggs, beaten
  • 1/3 cup evaporated milk
  • 3 slices toasted bread, crumbled
  • 1/4 cup melted butter
  • 1 tablespoon green onion tops

Instructions

  1. Cook turnips until tender, then drain and mash.
  2. Cook bacon until crisp, remove from pan, and crumble.
  3. Reserve 2 tablespoons bacon drippings in the pan.
  4. Saute chopped onions, garlic, and bell pepper in the bacon drippings.
  5. Stir in mashed turnips, beaten eggs, evaporated milk, crumbled bread, and melted butter.
  6. Spoon the mixture into a 3-quart casserole dish.
  7. Top with crumbled bacon and chopped green onion tops.
  8. Bake at 350°F (175°C) for 30 minutes.
