Ingredients

  • 1/2 lb. mushrooms, thinly sliced
  • 1 stick butter
  • 3 Tbsp. flour
  • 2 garlic cloves, minced
  • 3 Tbsp. finely chopped green onions
  • 3 Tbsp. minced parsley
  • dash of cayenne
  • 1 tsp. salt
  • 1/3 cup dry sherry
  • 4 dozen small oysters, drained
  • 1/2 cup Italian bread crumbs
  • dash of Kitchen Bouquet

Instructions

  1. Sauté mushrooms in 2 tablespoons of butter and set aside.
  2. In a heavy skillet or pan, melt 4 tablespoons of butter; add flour and cook on low heat, stirring constantly until light brown.
  3. Add garlic, green onions, parsley, and Kitchen Bouquet; cook for 5 minutes.
  4. Add cayenne and salt; blend in the sherry.
  5. Add oysters and sautéed mushrooms; simmer for 5 minutes.
