Ingredients

  • 1 2/3 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 ripe banana
  • 1/3 cup peanut butter
  • 1/2 cup sugar
  • 2 eggs
  • 2/3 cup sour cream

Instructions

  1. Preheat oven to 450°F.
  2. Place paper liners in muffin tins.
  3. Combine flour, baking powder, cinnamon, and nutmeg in a medium bowl.
  4. Toss with a fork to blend; set aside.
  5. Peel banana; break into small pieces and set aside on wax paper.
  6. In a large mixing bowl, combine peanut butter and sugar.
  7. Mix at medium speed to blend, scraping sides of bowl if necessary.
  8. Add eggs; blend.
  9. Add bananas; blend.
  10. Add flour mixture in 2 stages and mix until completely blended.
  11. Do not overmix.
  12. Add sour cream; blend.
  13. Spoon batter into muffin cups to 3/4 full.
  14. Bake for 25 minutes.
  15. Cool on rack for 10 minutes.
  16. If preparing for freezer, cool completely and then wrap in plastic wrap and freeze.
