- Preheat oven to 450°F.
- Place paper liners in muffin tins.
- Combine flour, baking powder, cinnamon, and nutmeg in a medium bowl.
- Toss with a fork to blend; set aside.
- Peel banana; break into small pieces and set aside on wax paper.
- In a large mixing bowl, combine peanut butter and sugar.
- Mix at medium speed to blend, scraping sides of bowl if necessary.
- Add eggs; blend.
- Add bananas; blend.
- Add flour mixture in 2 stages and mix until completely blended.
- Do not overmix.
- Add sour cream; blend.
- Spoon batter into muffin cups to 3/4 full.
- Bake for 25 minutes.
- Cool on rack for 10 minutes.
- If preparing for freezer, cool completely and then wrap in plastic wrap and freeze.
