Ingredients

  • 2/3 cup shortening
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 cup ripe mashed bananas
  • 1 teaspoon vanilla
  • 2 1/2 cups flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon soda
  • 3/4 teaspoon salt
  • 1 teaspoon cinnamon

Instructions

  1. Cream shortening and 1 cup sugar; beat in eggs, mashed bananas, and vanilla.
  2. Sift flour, baking powder, soda, and salt together. Blend into banana mixture.
  3. Combine remaining sugar and cinnamon. Drop cookie dough from teaspoon onto greased baking sheet.
  4. Sprinkle each cookie with cinnamon sugar.
  5. Bake at 350°F for 12 minutes or until browned.
