Ingredients

  • 1/4 cup balsamic vinegar
  • 3 tbsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp fresh black pepper
  • 1/4 tsp crushed red pepper
  • 3 garlic cloves, minced
  • 4 c chopped tomato
  • 1 c chopped cucumber
  • 1/4 c diced part skim mozzarella cheese
  • 1/2 c thinly sliced fresh basil
  • 3 tbsp chopped pitted kalamata olives
  • 1 (8oz) day old ciabatta bread cut into 1/2 in cubes

Instructions

  1. 1. Combine first 6 ingredients in small bowl and whisk together.
  2. 2. Combine tomato and next 5 ingredients in a large bowl. Pour dressing over salad and toss gently. Let stand at least 10 minutes or until dressing soaks into bread.
