Ingredients

  • 6 to 8 thick slices rustic-style bread
  • cold water
  • 8 plum tomatoes
  • 2 cucumbers
  • 8 green onions
  • 1/2 cup finely shredded fresh basil leaves
  • 1/3 cup olive oil
  • 1/3 cup balsamic vinegar or juice of 1 lemon
  • salt

Instructions

  1. Dunk the bread slices into a bowl of cold water.
  2. Squeeze the water out and tear the bread into bite-sized pieces.
  3. In a serving bowl, toss the bread with chopped tomatoes, cucumbers, green onions, and basil.
  4. Mix in olive oil and balsamic vinegar or lemon juice.
  5. Season with salt and pepper to taste and serve.
