Ingredients

  • 1 lb. fish fillets
  • 1 egg white
  • 2 Tbsp. water
  • 1/2 c. crackers (sodium reduced)
  • 1 tsp. dill weed
  • 3 Tbsp. Parmesan cheese, grated

Instructions

  1. Thaw fish if frozen.
  2. In a mixing bowl, stir together egg white and water.
  3. In another bowl, stir together crushed crackers, dill weed, Parmesan cheese, and parsley.
  4. Dip fish into the egg white mixture, then into the cracker mixture to coat.
  5. Cook fish in a hot skillet until it flakes easily with a fork, turning once.
  6. Alternatively, bake in the oven at 400°F for 45 minutes, turning once.
