Ingredients

  • 1 1/4 cup flour
  • 1/2 cup sugar
  • 1/2 cup margarine
  • 2 eggs
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla
  • 1/8 teaspoon baking soda
  • 1 cup walnuts
  • 1 cup raisins
  • 1 cup coconut (optional)

Instructions

  1. Preheat oven to 350°F.
  2. Lightly grease an 8-inch square pan.
  3. Combine flour and sugar, then cut in margarine until mixture resembles fine meal.
  4. Press into greased pan and bake for 20 minutes or until edges are golden brown.
  5. Meanwhile, beat eggs, brown sugar, and vanilla until well combined.
  6. Stir in baking soda, walnuts, raisins, and coconut (if using).
  7. Spoon the mixture over the hot crust and spread evenly.
  8. Return to oven and bake an additional 20 to 25 minutes or until the top is set.
  9. Cool completely, then cut into bars and serve.
