Ingredients

  • 1/3 cup grated Parmesan cheese
  • 1 tablespoon dried parsley flakes
  • 2 tablespoons margarine or butter
  • 2 tablespoons flour
  • 1 teaspoon salt
  • 2 cups milk
  • 4 ounces shredded Swiss cheese
  • 1 (2 lb.) package frozen hash brown potatoes

Instructions

  1. Heat oven to 350°F.
  2. Grease a 12 x 8-inch (2-quart) baking dish.
  3. In a small bowl, combine Parmesan cheese and parsley; set aside.
  4. Melt margarine or butter in a large saucepan over medium heat.
  5. Stir in flour and salt; cook until mixture is smooth and bubbly, stirring constantly.
  6. Gradually add milk, cooking until mixture boils and slightly thickens, stirring constantly.
  7. Remove from heat and stir in Swiss cheese until melted.
  8. Add frozen hash brown potatoes to the cheese mixture, breaking up clumps if necessary; mix well.
  9. Pour the mixture into the greased baking dish and cover with foil.
