Parmesan Tomatoes are a savory, cheesy baked side dish featuring juicy tomatoes topped with crunchy bread crumbs, Parmesan, herbs, and a hint of pepper, perfect for any meal.

Ingredients

  • 2 large tomatoes
  • 3 Tbsp. dry bread crumbs
  • 2 Tbsp. grated Parmesan cheese
  • 2 Tbsp. margarine, melted
  • 1/2 tsp. dried basil
  • 1/2 tsp. chopped fresh parsley
  • dash of pepper

Instructions

  1. Remove stems from the tomatoes and halve crosswise.
  2. Place the cut side up in a small baking dish.
  3. Combine bread crumbs, Parmesan cheese, melted margarine, dried basil, chopped parsley, and pepper.
  4. Sprinkle the mixture over the tomato tops.
  5. Bake at 375°F (190°C) for 15 minutes or until heated through.
