Ingredients

  • 1 cup bread crumbs
  • 1 tablespoon flour
  • 3 tablespoons grated cheese (Romano or Asiago)
  • 2 eggs
  • dash of salt
  • dash of allspice

Instructions

  1. Mix bread crumbs, flour, grated cheese, eggs, salt, and allspice together well.
  2. If the mixture is sticky, add more bread crumbs until manageable.
  3. Put the mixture through a meat grinder and cut into 2 or 3-inch lengths to form passatelli.
  4. Boil the passatelli in 1 quart of chicken broth until they float and are cooked through.
